New South Wales (NSW) food safety legislation mandates that certain hospitality, retail and food service businesses must appoint at least one certified Food Safety Supervisor (FSS). This applies to any establishment where ready-to-eat, potentially hazardous food is prepared, handled or served - including restaurants, cafés, pubs, clubs, caterers, food trucks, and supermarkets.

This legislation is designed to ensure that there is always someone on staff who understands food safety laws and can oversee safe practices. Something that can only be achieved through the completion of a Food Safety Supervisor course delivered by an approved.

Assessment activities

The course assessment is where you put your learning into action. It is designed to make sure you not only know the rules, but can also follow them in a real food environment.

There are two main parts:

  1. Knowledge assessments - These include short quizzes and case studies after each lesson. They check your understanding of safe food practices, hygiene requirements and legal obligations. Passing these confirms you have grasped the core concepts.
  2. Observer Report - This is the practical component. A suitable observer, usually someone in your workplace, watches you perform routine food safety tasks like checking food temperatures, preventing cross-contamination, or cleaning equipment correctly. They then confirm your competency by completing and submitting the report template. If you are not currently working in food service, you can complete the Observer Report through simulated activities or role-play scenarios with a suitable nominated observer. As long as the tasks have been performed in the past 12 months and under different conditions, they can be included in the report.

Units of competency

The AIFS Food Safety Supervisor Course is based on nationally recognised units of competency that are valid Australia-wide. The exact units you will receive on your Statement of Attainment depend on the industry sector you select during your student registration. 

The two industry sectors that are recognised in NSW are:

Hospitality Retail
  • SITXFSA005 - Use Hygienic Practices for Food Safety
  • SITXFSA006 - Participate in Safe Food Handling Practices
  • SIRRFSA001 - Handle Food Safely in a Retail Environment

 

Receiving Your NSW Food Safety Supervisor Certificate

Once you have successfully completed all training and assessments, your hard copy NSW Food Safety Supervisor Certificate will be issued by AIFS on behalf of the NSW Food Authority.

  • It is valid for five years
  • Your certificate number can be used as proof of course completion while your physical certificate is in transit
  • It belongs to you, not your employer, so you can carry it into future jobs
  • Your employer must keep a copy on-site in case of inspections

This certificate is highly valued in the food industry. It shows employers you are serious about compliance and are capable of supervising food safety in the workplace.

NSW Food Safety Supervisor certificates expire after five years. When it is time to renew, you must complete the NSW Recertification course.
